Rosemary Beetroot Salad

Do you get a bit bored of salads? Adding herbs such as rosemary to a beetroot salad gives your food much more than just extra flavours; herbs have been used for thousands of years for their potent healing qualities.
The rosemary in this salad has been used medicinally to improve memory; it can also relieve muscle pain and spasm.  Rosemary can stimulate hair growth and support the circulatory and nervous systems.  It’s got quite a strong flavour so it’s best not to overdo it.
So I’m really looking forward to this colourful rosemary beetroot salad with my grilled chicken for lunch today.
Ingredients
• 1 beetroot
• 1 kumato tomato
• 2 carrots
• 1 green pepper
• 1 red pepper
• 3-4 short sprigs of rosemary (about 1 level tbsp of rosemary leaves)
• 1 tsp of extra virgin olive oil
• 1 tsp of lemon juice
Method:
• Chop all the veggies finely into roughly the same size. (If you have a Thermomix, just chop everything except the tomato on Speed 4 for a couple of seconds)
• Combine the rosemary, oil and juice to make a dressing
• Just before serving, pour over the dressing.
