A quick word of warning, you might need a spoon for this coconut chia smoothie!  The chia-seeds when added to liquid tend to form a jelly-like consistency, which is great if you like your smoothies nice and thick but not so great if you are drinking on the run.

As with all my smoothies, just play with whatever ingredients you have to hand:

– 30g ground chia seeds
– 100g fresh pineapple
– 1/2 banana
– 1 large handful of baby spinach & beetroot leaves
– 250ml coconut water

Simply blend all the ingredients until you get a super-creamy consistency you’re happy with.  If your taste buds are changing and you need less sweetness, leave out the banana or half the amount of pineapple.
