These are my go-to sweet treat when I’m in  a rush and a bit low on healthier ingredients.  They’re quick and cheap  to make at home. I think portion control is really important with these little devils as they are definitely very morish for those with a sweet-tooth…or even a candida issue!

Dried fruits are generally high in sugar so moderation is definitely the key here.  To avoid using dried fruits, you could try using a much smaller quantity of rice malt syrup.

Ingredients:

  • 100g dried dates
  • 100g ground raw  cashews
  • 35g coconut oil – melted
  • 50g shredded coconut
  • 1 heaped tbsp ground chia seeds

Method:
If you’ve a thermomix, this is going to be really easy.  Chop the dates for a few seconds at speed 7/8 until a paste forms.  Add the remaining ingredients and whizz together for a few seconds on speed 4 until the mixture starts to clump together. Remove the “dough” and form in to a rectangle between 2 sheets of baking paper.  Pop in the freezer for 15 minutes or until nice and firm.  Cut into squares and serve.  (if the weather’s warm you might want to store in your fridge to keep the squares from becoming too soft).
