I love dinners made with minced meat but sometimes I need a break from my usual favourites of chilli con carne or Bolognese. So, I’ve teemed up some beef mince with mint and lemon to make these tasty meatballs. Served with an easy pasta sauce over spaghetti or spiralised veggies, this is one satisfying meal the whole family will enjoy.
Ingredients – meatballs
- 500g minced beef
- 1 slice of bread made into breadcrumbs (I use gluten-free)
- 1 egg
- 1 teaspoon of finely grated lemon rind
- 1 teaspoon of allspice
- 1/2 small onion, finely chopped
- 1 tbsp of mint, finely chopped
Ingredients – pasta sauce
- 1 tbsp refined coconut oil
- 1 tin chopped tomatoes
- 1 medium garlic clove, finely chopped
- 1 medium onion, finely chopped
To make the meatballs: simply combine all the ingredients and form into 12 balls about the size of a golf ball. Keep in the fridge whilst making the pasta sauce.
To make the pasta sauce: lightly saute the onion and garlic in the oil for a couple of minutes. Add the tomatoes and simmer for 10-minutes.
To cook the meatballs: place the balls on top of the pasta sauce and cook through for about 10-minutes, carefully turning the meatballs over halfway through cooking. You might need to add a little water to prevent the sauce from drying out.
Serve with your usual spaghetti or spiralised veggies, such as zucchini.
